So my sister made this Eggplant Parmesan over Thanksgiving holidays

and it was simply scrumptious. The best part is its guilt free!

Eggplants are baked not fried :)

I have made it a few times since....perfect for entertaining

because it can be prepared in advance and baked at dinner time. Guests

are very impressed with the presentation and its super easy to serve each stack!
